Stuffed Yorkshire Pudding
Pretty Much The Ultimate Comfort Food!
It takes a bit of time to make, but it is well worth it!
SO easy, but you have to let it 'rest' (I am always too impatient!)
And be ready for some smoke in the kitchen!!!
1. Fully cook 1 roast... Crockpot, oven, it's up to you.
2. In a bowl, whisk 1 3/4C flour with a couple dashes of salt. Make a well and crack 4 eggs into it, add 1 1/2 T beef drippings from cooked roast (or use melted Crisco for dessert popovers).
3. Beat in 1/2C milk, til well-mixed.
4. Add 1/2C milk and whisk completely.
5. Set aside to REST FOR 30+ MIN!!!
6. Preheat oven to 450.
7. In muffin tins or custard cups, add 1/2-1t crisco. Place in oven til smoking lightly.
8. When shortening is hot and smoking, ladle batter into cups, 3/4 full.
9. Bake 10-15 min (do not open oven, even to peek, until after 10 min....)
10. Prepare Mashed Potatoes while you wait... And make gravy for roast
11. When golden on top and puffed, remove from oven...
12. Crack open on plate, add mashed potatoes in center, top with shredded roast beef and gravy.
13. Try really hard not to eat ALL of the leftover popovers with jam!!!!!!
*Sometimes they rise in the middle, sometimes they fall. Either way, they are DELICIOUS!

BBQ Pork Quesadillas
Dinner was great!
I cooked a pork roast (or 2) in the crockpot the other day. I put the leftovers in a covered dish with BBQ sauce. Today when we came home from work, I made Quesdaillas and stuffed them with the BBQ pork! It was delicious! (After Nicole cleaned her plate, she said she didn't like it.... Then she ate some more!)

Caldo Tortilla
In a frenzy to replace burrito and tacos, I created a magnificent tortilla soup! Perfect for a nice, chilly day.... And The Clone Wars! We enjoyed the warming soup while huddling together in the living room.
Here's my made up soup:
1. Cook rice.
2. Saute onions in EVOO, add pepper, drained canned chicken, 1/2C salsa, and 2T crushed tomatoes. 'Stir Fry' til warmed through.
3. In soup pot, add 1qt chicken broth and bring to a boil.
4. Stir salsa mix into chicken broth.
5. In bowl or mug, add 1/2C rice, ladle soup over top.
6. Garnish with choice of avocado, diced tomato, cheese, sour cream, tortilla chips.
7. Enjoy!!!!

16 years.... And counting
It was 16 years ago today that I collapsed in gym class. A ruptured AVM in my cerebellum. I find it hard to swallow that one tiny detachment of vessels caused so much change in my life. Some for the good, some difficult to swallow. I am even more thankful to experience the gratitude that others have had in their own lives because of this one instance... It truly is a miracle from God.
Some of my life is better than before and the rough patches are smoothed out with love from friends and family. I couldn't be more grateful. It hardly seems fair for me to begrudge anything because of the differences.
So, I've been alive for 16 years! I should go out and celebrate a 16th birthday!!!
But I am off to go thank those who deserve my continuous gratitude!

When I grow up
I want a sail boat.
I cannot sail by myself, you know. I choose not to fully understand every element so that I cannot be responsible for anything.
Except for maybe the food.......

We obviously sailed at sunset.... Can you see the moon?
We sailed completely by moonlight and radar. And shadows. And sound.
