It's a simple week, food-wise. School and jobs ;) are winding down and I need to empty and defrost the chest freezer! The funny thing is that we have 1 more year in this town, I guess I need to start thinking of cleaning out the freezer, anyway!!!

MPM 6-7-6-13
We went to Maine for a Medical School Graduation.... The Doc got to hood one of the graduates! What an honor! And Nicolee was SO well behaved for the long trip! I was proud!
Here's what I plan to eat this week!
Sunday- On the Road, we picked up Burger King......
Monday- Taco Salad
Tuesday- Bruscetta Bake
Wednesday- Irv-meister's Ribs
Thursday- Pollo Bowls
Friday-the Doc's Internship Graduation (even though his internship was last year.... It doesn't make sense to me, either!)
Saturday- FFYS
Pollo Bowls Recipe
1. Prepare rice.
2. In saucepan, in 1T EVOO, add 3 thawed chicken breasts. Cover with salsa, add dash of cumin, pepper, garlic salt, lime juice, etc.... Simmer til chicken is cooked through and easily shredded. Shred and set aside.
3. In 2nd saucepan, add pinto beans, taco sauce,
4. When all is finished cooking, place rice, beans, and chicken in 1/3 of bowl (imagine dividers, even though there aren't any!).
5. Serve extras on the side or on top of dish: Pico de gallo, salsa, sour cream, cheese, tortillas, etc...
